I searched high and low to replicate the best green smoothie I’d ever had, and here it is: spinach, frozen pineapple and banana, coconut milk and almond milk, all in carefully trialed proportions, given a good long blitz in the blender until it’s thick and creamy.
I am not a smoothie person; I can enjoy a sip, sure, but I can’t imagine drinking a whole one. But this smoothie: it was handed to me by a co-worker on a terrible, no good, very bad day. The smoothie originated, I suspect, at the Erewhon juice bar—Erewhon being a supermarket that makes Whole Foods look like a C-Town. And let me tell you, it turned that day around faster than you could say, “Shut up and take my money.”
There were a lot of icy, insipid sips along the way to green coconut perfection, but I knew I had it when my husband, wary of most green leafy things, drank it straight out of the blender jar while also saying: “What is this? And can you make more of it?”
The dominant flavor in the smoothie is coconut, though not overpoweringly so. The pineapple and banana are there, but subtly. The banana in combination with the coconut milk gives this smoothie its creamy texture, and the pineapple adds a punch of sweet. (If you like it a bit more on the sweet side, you can add a tablespoon of honey before blending.) The spinach is undetectable (per my husband) and adds a nice, earthy je ne sais quoi (if you ask me). Two kids were unassuaged by “hulk smoothie,” but one kid was tempted and declared it “pretty good.” One for three, there you have it.
You will need an actual blender to make the smoothie; a food processor or handheld (immersion) blender won’t work; I tried both those things before I had a blender. However, you don’t need a big, powerful blender; a small, personal-sized one works great. I used my Nutribullet. (By the way, I bought the Nutribullet primarily for making sauces, not smoothies. It’s great for Indian and Mexican cooking.)
Green Coconut Smoothie
- Blender (a small one is fine).
- 1/2 cup coconut milk
- 1/2 cup almond milk – plus 1-2 Tbsp more if needed to blend
- 1 cup frozen banana slices – about 15
- 1 cup frozen pineapple chunks
- 1 cup spinach
- 2 Tbsp flaked coconut – optional
- 1 tsp vanilla extract – optional
- 1 Tbsp honey – optional, for sweeter smoothie
- Add all ingredients to a blender jar. Blend until completely smooth, thick, and creamy.
